🥬 Killed lettuce (also known as wilted lettuce or Kilt lettuce) is a traditional dish in the Appalachian mountains and the South. It is a native German dish orgininating from the Black Forest Region.

The salad is as simple as it gets. Hot bacon grease and vinegar gets drizzled over a bowl of lettuce, lightly wilting (or “killing”) the leaves. The salad gets topped with sliced green onions, occasionally sliced radishes or ramps, and the bacon that was rendered out to make the grease.

Garnish with a sliced hardboiled egg and or lemon wedge.
